Chef Ken Jay Lim

Executive Chef, Croisserie Artisan Bakery

Chef Ken Jay Lim is the Executive Chef of Croisserie Artisan Bakery in Kuala Lumpur and a founding member of Ambassadeurs du Pain Malaysia.

His work reflects a comprehensive command of artisan boulangerie, where excellence is defined by versatility across the entire craft rather than mastery of a single speciality. Shaped by French tradition, Japanese craftsmanship, and his Malaysian roots, his baking philosophy seeks to balance the classics with reinterpretation, while remaining grounded in consistency, practicality, and the development of flavour.

In 2025, he represented Malaysia at the 10th Mondial du Pain, marking the nation’s first participation in the competition, where Malaysia achieved 4th place overall. This milestone deepened his commitment to passing on know-how through education, collaboration, and shared learning. As he continues this journey, he hopes to shape a practice that remains adaptable and guided by what has been learnt along the way.
